Pan Dulce


1 package active dry yeast

1/2 cup warm water

1/2 cup granulated sugar

1 teaspoon salt

3 1/2 cups flour

2 tablespoons vegetable shortening

2 large eggs, beaten

1/4 cup vegetable shortening

1/4 teaspoon salt

1 teaspoon cinnamon

1 egg yolk

2/3 cup flour


1. In large bowl, stir together yeast, 1 tablespoon sugar, salt and 1/2 cup warm water. Stir

until completely dissolved.

2. Add 1 3/4 cups of flour and mix well. Cover bowl with towel or plastic wrap. Let sit in

warm place until dough has double in size, about 50 minutes.

3. In a separate bowl, cream together shortening and remaining sugar from the half cup

and then add eggs. Add egg mixture and the remaining flour to the risen dough and mix

well. Cover and let rise again until dough has doubled in size, about an hour.

4. Turn the dough out onto a lightly floured surface and divide dough into 12 equal parts.

Form each piece into a round flat piece about 4 inches in diameter. Place the buns on a

greased baking sheet.

5. Next prepare topping, by beating together sugar, shortening, salt and cinnamon. Add

the egg yolk and flour to mixture. Stir until you have a crumbly mixture.

6. Spread topping over each bun. Cover buns on baking sheet with towel or plastic wrap

and let rise until double in size again, about 1 hour.

7. Bake in a preheated 400° F oven for about 15 minutes or until the edges of buns start

turning golden brown.
